What is oil viscosity?

Viscosity is a fluid’s resistance to flow, measured at a stated temperature; it is not one fixed number for an oil. Laboratories report kinematic or dynamic viscosity, while a label such as 5W-30 is an SAE J300 classification built from several test limits rather than the oil’s exact viscosity.
Viscosity in plain terms
Viscosity describes a fluid’s resistance to flow. It must always be tied to temperature because engine oil becomes less viscous as it heats and more viscous as it cools. A grade label is therefore not the oil’s one exact viscosity value.
Two measurements appear often in technical data. Kinematic viscosity relates flow under gravity and is commonly reported in mm²/s, also called cSt, at temperatures such as 40 °C or 100 °C. Dynamic viscosity relates shear stress to flow and is reported in mPa·s, also called cP. SAE J300 uses multiple methods and temperatures because one measurement cannot describe every engine condition.
How viscosity relates to the grade
A grade like 5W-30 has two parts defined by SAE J300. The 5W category uses low-temperature cranking and pumping limits. The 30 category uses a kinematic-viscosity range at 100 °C and a minimum HTHS value at high temperature and shear.
These are classification boundaries, not exact product measurements. Two 5W-30 oils can sit at different points within the allowed ranges and can use different formulations and approvals. Why the correct viscosity matters
Oils that carry both a W and non-W category are multigrade oils. The classification shows that the oil meets both sets of limits; it does not say the oil keeps one viscosity from startup to operating temperature.
Getting viscosity right is important because the engine’s oiling system is designed and validated around specific limits. The safe approach is to use the grade your owner’s manual specifies. Viscosity is only one half of the choice: the API, ILSAC, ACEA, or OEM performance specification is separate, and both must match.

What does the W in 5W-30 mean?
The W stands for winter. The number before it is an SAE category based on low-temperature cranking and pumping limits; lower W categories are tested at lower temperatures.
What is a multigrade oil?
A multigrade oil, like 10W-40, meets both an SAE winter category and a non-winter hot-viscosity category. The label does not mean viscosity stays constant as temperature changes.
Is a higher second number always better?
No. It identifies a higher SAE hot-viscosity range, not quality or protection. Match the grade and specification your manual requires.
